20 Delicious Casserole Recipes

Casseroles are a love language in my family, especially in the colder months when we’re all craving something hot, filling, and cozy. They’re not only tasty and creative, but they can help stretch the budget while still providing plenty of veggies, nutrients, and protein.

Most casseroles are wonderful for meal prepping since they last well in the fridge and are easy to throw together one night and then pop in the oven the following day.

Here are twenty of my favorite casserole recipes to make this season:

1. Spaghetti Squash Lasagna Casserole

If you like lasagna, then this casserole is for you! Spaghetti squash is a nourishing lower-carb “vessel” for any sauce or melted cheese you may be craving! It’s quite easy to dress this squash in something simple to create a nutritious meal.

2. Sprouted Overnight French Toast Casserole

A breakfast casserole to make your life SO much easier and more enjoyable! I love French toast, and this is such a creative twist on the classic meal, perfect for a big family!

3. ​​Zucchini Pizza Casserole

Pizza is a family favorite in my house, which is a great way to satisfy that craving while providing more nutrients. Zucchini has many health benefits and is loaded with vital vitamins, minerals, and antioxidants, such as fiber, vitamin B6, iron, zinc, vitamin A, and potassium.

4. Loaded Veggie + Chicken Casserole

Use all of the leftover chicken or veggies on the verge of going bad in your fridge to throw together this simple casserole! It’s incredibly flavorful, super satisfying, and just so GOOD!

5. Greek-Style Breakfast Casserole

A bunch of our favorite things baked together to make a delicious morning breakfast idea—fantastic for weekend brunch to feed a crowd or weekly meal prep. You can also make it in the evening for a quick dinner!

6. Creamy Chicken + Broccoli Casserole

All you need here are a few basic ingredients for a tasty meal that will have your family thinking you put in way more effort than you did! It’s also full of quinoa, a superfood containing several important minerals – including fiber, antioxidants, magnesium, iron, and zinc.

7. Buffalo Chicken + Pumpkin Casserole

I know the combination might seem weird, but it works, I promise! The buffalo and pumpkin complement each other perfectly! And it’s peak season for pumpkin, which I’m a sucker for. Plus, it’s loaded with healthy vitamins, minerals, and plant compounds.

Green Bean Casserole isn’t just for Thanksgiving—although this dish would make a fabulous side dish for the holiday. It’s also an excellent choice for gluten-free diets since traditional recipes usually contain a few processed ingredients full of gluten and sodium!

I believe in everything in moderation, including cream cheese! This deliciously creamy casserole is remarkably comforting and full of fiber and protein.

If you have a lot of people to feed in the mornings, then breakfast casseroles like this will make your life so much easier! You can also toss any extra veggies you have in the saute pan since the recipe is so versatile and interchangeable.

If you’re a cabbage lover like me, then you’ve gotta get this on your family’s menu asap! It’s ultra-satisfying and hearty without being too “heavy.” In my opinion, cabbage is a totally underrated veggie, as it’s full of nutrients and incredibly affordable.

My kids LOVE this chili bake casserole, especially in the fall and winter. Everything is interchangeable as well, so feel free to get creative and mix up the type of beans or meat you use!

Here’s a one-pan recipe that only takes 20 minutes to make and is a wonderful option for meal prepping. The mix of seasonings, veggies, and protein is absolutely perfect!

Everyone needs a recipe for a REALLY GOOD cheesy potato casserole saved for a rainy day. These creamy, cheesy, crispy-topped potatoes are a great compliment to a special meal or to take to a potluck with friends!
