Rachel’s Quick N’ Crispy Ground Turkey Tostadas

Make everyone in the family happy with this super easy & FUN protein-packed recipe!

Who doesn’t like tostadas?!!

I don’t personally know anyone who doesn’t. 😅 They are just super good and get everyone at my house excited about dinner! Teenagers and young adults (older adults too! 🙋‍♀️) just love this kinda thing!

Especially when they get to pile on the toppings themselves.

This recipe includes a few quick tricks to crisp up the tortillas quickly for a big group (I have a large family to feed, so this method keeps things easy!).

I also prefer to use avocado oil + sprinkle the corn tortillas very lightly with my homemade taco seasoning before toasting, just to jazz them up a bit!

This method also makes AMAZING homemade tortilla chips if you cut them into fourths.

So remember that next time you want to have homemade chips & salsa! Nothing better!

I love adding shredded fresh cabbage that’s been lightly tossed in apple cider vinegar.

It just adds some nice texture and a bit of veggie goodness. Cabbage is a very affordable and hearty vegetable.

I love to mix up my own seasonings with organic spices because those little packets of taco seasoning are often made with canola and soybean oils linked to inflammation, sugar, anti-caking agents, and natural flavors. Not to mention making my own taco seasonings actually tastes WAY better too!

BEST Homemade Taco Seasoning Mix

You’ll never purchase those store-bought packets again, after making it yourself!!
So simple, delicious, and lasts for several months – so double or triple this recipe and keep it handy in a small glass container near your stove.

Ingredients for Taco Seasoning Mix:
2 Tbsps chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp crushed red pepper flakes
1/2 tsp dried oregano
1 tsp paprika
3 tsps ground cumin
2 tsps sea salt
2 tsps ground black pepper

Instructions for taco seasonings:
In a small mixing bowl, whisk all ingredients until combined well.
Store in an airtight container.
To use your homemade spice mix in recipes, start with a smaller sprinkle–taste test to decide the amount of spice for your family’s taste. Usually, 2 Tablespoons per pound or so of ground meat is perfect.

4 servings

Ingredients:

8 small, sprouted corn tortillas
avocado or olive oil cooking spray
1 1/2 lbs ground turkey
3 fresh garlic cloves, minced
2 Tbsps homemade taco seasoning (recipe above) plus extra for tortillas
2 Tbsps tomato paste
1/2 cup crushed tomatoes with juices

Topping ideas:

1/2 a head green cabbage chopped
pickled red onion (recipe above)
ripe avocado, chopped or sliced
fresh cilantro leaves
fresh lime or lemon wedges
whatever else you like

Instructions:

Prepare your toppings. Chop your cabbage and very lightly toss it with some vinegar (I use raw apple cider vinegar, but any vinegar works) and sea salt. Set aside.

Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
Place the corn tortillas on your prepared baking sheet and lightly spritz or brush with your oil. Very very lightly sprinkle them with some of your extra taco seasoning.

Bake for 8-10 minutes, or until nice and crispy, flipping halfway through. I like to very lightly squeeze fresh lime on the crispy hot tortillas. Optional but adds a nice touch.

Meanwhile, heat a large skillet over medium-high heat.
Add in your ground meat and cook, mincing it with a wooden spoon constantly.

Once the meat is no longer pink, stir in the garlic and 2 Tablespoons homemade taco seasonings.
Cook for 1 minute more, then add the tomato paste and crushed tomatoes. Cook, stirring frequently for about 3 more minutes to combine the flavors.

To assemble your tostadas, add a big spoonful of your taco meat over a crispy tortilla.

Top with all your toppings of choice, a bit of everything as desired.

Repeat with the remaining tostadas.
Enjoy while hot!
