Fresh Italian Herb Chicken Breasts

You will want to double this recipe, & add to your salad the next day.

This is an adaptation of my favorite cilantro-lime chicken, and it’s now tied for FAV.

Great to have options!

Makes 6 Servings


  • 6 chicken breasts
  • One bunch coarse chopped fresh Basil Leaves (about 1/2 cup packed)
  • 2 Tbs Fresh Oregano leaves.
  • 1 Tbs Fresh Thyme leaves.
  • 1/2 cup Extra Virgin Olive Oil
  • 2-4 garlic cloves (adds so much flavor & the garlic is good for us!)
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper


Wash, pat dry 6 chicken breasts

Blend basil, oregano, thyme, olive oil, garlic cloves, sea salt and black pepper.

Blend until thick paste or pesto.

Combine all ingredients and the chicken in a ziploc.

Coat chicken well.

Place in the refrigerator to Marinate 2-6 hours}

After marinating the chicken breasts, let sit on counter for 15-20 minutes, then place breasts on a flat sheet pan.

Bake at 350 for 35-45 minutes (varies depending on size, do not over cook) just until the juices run clear.

Prep 2 batches at a time, so you have extra protein for the next day!

Serve with fresh tomatoes & sautéed fresh zucchini.
