Pickle Lover’s Chicken Salad

What to do with all the leftover grilled chicken! YEP! It makes for a very tasty pickle chicken salad!

Soooo you’re either completely obsessed with pickles or you can’t stand them. I feel like there’s no in-between here. What do you think?

I’ve always been completely obsessed with pickled anything & everything…so this recipe is my kind of thing!

🥒💡TIP: Do you have any pickles in your fridge? Go check the ingredients list!

✅Chances are if you buy regular commercial pickles … you’re not getting healthy probiotics from them!

👉🏾For pickles to contain the “good” bacteria, they must be fermented in a solution of water and salt and REFRIGERATED. Pickles sitting on the store shelf (no refrigeration) do NOT fall into this “raw” category.

🔥Check your store’s refrigerated section for probiotic-rich pickles and be sure to read the label!

4 servings

Ingredients:

  • 2 cups cooked and chopped chicken breast
  • 2 hard-boiled eggs, diced
  • 2 large celery sticks, finely diced
  • 1 cup dill pickles, diced
  • 4 green onions, chopped
  • a handful of fresh dill, finely chopped
  • 1/3 cup plain Greek yogurt
  • 1 Tbsp white wine vinegar
  • 1 Tbsp Dijon mustard
  • sea salt and ground pepper to taste
  • Iceberg or Romaine lettuce leaves, to serve

Instructions:

In a large mixing bowl, add the cooked chicken, eggs, celery, pickles, green onions, and dill.

Stir in the yogurt, vinegar, and mustard, then season to your taste. Taste test and add more of anything you think it needs.

Serve on its own or wrap in lettuce leaves.

Enjoy!
