AN ULTRA DELICIOUS + NUTRITIOUS, SPIN on the traditional Caesar.
This dressing is so tangy and fresh tasting, I could pour it on top of just about everything! (hint: make extra dressing!)
As a member of the cruciferous vegetable family, Brussels sprouts are packed with vitamins, minerals, and antioxidants that support overall health and wellness. They’re also rich in fiber, which can help lower cholesterol levels and regulate blood sugar.
But this salad is more than just a healthy meal – it’s a flavorful and satisfying experience!
Our homemade Caesar dressing is made with fresh garlic, lemon juice, and Dijon mustard, giving it a bright and tangy taste that complements the earthy sweetness of the Brussels sprouts. (No anchovies found here…)
And let’s not forget the all-important crunch! Our homemade croutons are made with sprouted Ezekiel bread, healthy oil, and a pinch of sea salt, adding a satisfying texture to each bite. My suggestion is to make extra croutons as they are FANTASTIC on top of tomato soup as well!

1. Rinse 1-2 pounds of Brussels sprouts and pat them dry.
2. Trim the ends and remove any damaged or discolored leaves.
3. Cut the Brussels sprouts in half or quarters, depending on their size.
4. Place the cut Brussels sprouts in a food processor fitted with the slicing attachment.
5. Process the Brussels sprouts in a steady, gentle stream, using the slicing attachment to shave them into thin strips.
6. Collect the shaved Brussels sprouts in a large bowl and discard any excess or damaged leaves.
Method 2: Using a Mandoline or Sharp Knife
1. Rinse 1-2 pounds of Brussels sprouts and pat them dry.
2. Trim the ends and remove any damaged or discolored leaves.
3. Cut the Brussels sprouts in half or quarters, depending on their size.
4. Use a mandoline or sharp knife to shave the Brussels sprouts into thin strips.

Salad:
- 1 lb. trimmed and halved brussels sprouts
- 4 slices Ezekiel bread, cut into small cubes
- 2 Tbsps avocado oil or olive oil
- ½ tsp sea salt
- ¼ tsp pepper
- 1/2 tsp garlic powder
- 1 lb. cooked chopped/shredded chicken
- ¼ cup freshly grated parmesan
Dressing:
- 1/3 cup homemade mayonnaise
- 1/4 cup plain Greek yogurt
- 2 Tbsps freshly squeezed lemon juice
- 1 fresh garlic clove, pressed
- 1 Tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1/2 tsp freshly ground black pepper
- pinch of sea salt
Instructions:
Preheat your oven to 375 degrees f.
In a medium bowl. Whisk together all the ingredients for your Caesar dressing.
Taste test, adjust any ingredients to your personal preference (I like additional garlic & lemon), then set aside.
Place the cubed bread onto a sheet pan and lightly drizzle with oil. Sprinkle with sea salt, freshly ground black pepper, garlic powder, and toss well to coat all of the croutons.
Roast for 15 minutes, stirring every 5 minutes. Remove from the oven once they are nice and crispy.
While your croutons are roasting, prepare the shaved brussels sprouts (full step-by-step guide above in this post) and place them in a large serving bowl.
Add cooked chicken and drizzle everything with your homemade dressing. Toss well to combine.
Top with freshly grated parmesan and crispy croutons.
