Meet Karen, Who Lost over 7 Pounds During the CleanFoodCrush 30 Day Challenge!

My name is Karen, I am 45 years old, and have two amazing felines that keep me smiling. I am a public library director, and I enjoy writing, reading, and watching crime dramas!

The structure of this program gave me the push I needed. Prior to the program, I thought I was eating fairly well, and in some ways, I was.

But even still, I was scared going into the first week. (I can’t possibly eat that much spinach!!!) But I did it anyway.

My biggest issue before Clean Eating was consistency and knowing what to cook and how to cook!

The recipes and guidelines for each week were so important to me. And making the time to plan! Honestly, I’ve learned to write it all down on a table – each meal, each day – what I ate and what time I ate.

I write the “what” when I make the plan, and I add the time when I actually eat it. I think it saves me all the headaches of wondering what in the world am I going to eat?!?!

My words of wisdom for anyone planning to join would be to Commit to the program for 30 days. Decide you’re going to do it, even though it’s likely going to be hard. I truly believe mindset is a huge part of it. And. When it gets hard, reach out for support.

I have learned that I love poached eggs with this recipe: Easy Poached Egg Avocado Toast for Clean Eating Mornings! I’m also a big fan of the one-skillet or sheet-pan style meals, like this one: Tex Mex Zucchini & Chicken Skillet for Clean Eating Style Taco Tuesday!

I have followed the challenge for only 30 days, and I am thrilled that I lost 7.7 pounds and a couple of inches in that time.

So excited to keep trying new recipes as I stay with the program going forward!
