Supreme Pizza-ish Bell Pepper Cups

These Pizza Inspired Bell Peppers were one of the very first recipes that became popular on my blog.
2 years later, I still think about making them on the weekend.

If you’re a stuffed pepper fan…these are pretty easy to make & the kids will actually eat them, especially if you let them help with assembly.

Makes 6-8 servings (makes 12 halves)

Ingredients:

  • 6 large Green Bell peppers, halved, seeded and cored.
  • 1.5 cups Organic-low sugar marinara. 1 or two Tbsps for each half.
  • 1.5 lbs Cooked and seasoned lean ground turkey breast (I seasoned the meat with a pinch of garlic/onion powder, Italian seasonings, sea salt and freshly ground black pepper while cooking.
  • 6 thin slices all natural provolone or mozzarella, cut in half so that each pepper half only contains 1/2 slice {cheese is optional}

Add your fav pizza-type veggies on top:

I also added fresh basil and thyme.

  • Mushrooms
  • Tomato
  • Olives
  • Red Onion

Instructions:

Preheat oven to 375 degrees f

Halve your green bell peppers lengthwise

Place peppers in a boiling pot of water for 3 minutes

Drain on paper towels, lay them “cup” side up, on a flat sheet pan.

Place a few Tbsps cooked turkey, and marinara inside each pepper.

Place 1/2 slice of cheese on top of meat, then arrange desired Veggies on top of that.

Bake in preheated 375 f oven for about 8-10 minutes…just until cheese is melty.
