Creamy Micro Chopped Salad

Lots of DELICIOUS ingredients come together to create something VERY special here!

I used a bunch of fresh produce I had on hand that needed to be eaten – so feel free to substitute ingredients for whatever you have in your kitchen (or garden). You’ll likely create something that is surprisingly good! Often it’s the ingredients that we don’t typically think of adding that give it that touch of something special! So here’s a little nudge to get creative and try a unique salad combo today!

🔪Do you like chopping veggies?

I’ve always found it to be very relaxing for me. Chopping veggies forces me to slow down, calm down, and be present. It’s incredibly soothing and the finished result always makes me feel a great sense of accomplishment because my family will be eating all those beautifully prepared fresh vegetables.

➡️ Here are a few more of our favorite chopped salads that you’ll love:

➡️ Homemade Mayonnaise:

6 servings

  • 1 small head of green cabbage, chopped very small
  • 1 English cucumber, small diced
  • 10 radishes, small diced
  • 2 bell peppers (red and yellow), seeded and small diced
  • 1/2 small cantaloupe, seeded and small diced
  • 4 green onions, thinly sliced
  • pomegranate arils from 1 large fruit
  • 1/2 cup pumpkin seeds (pepitas) or sunflower seeds
  • 1/4 cup freshly chopped curly parsley

  • 1/4 cup homemade mayonnaise
  • 1 Tbsp Dijon mustard
  • 1 Tbsp maple syrup or raw honey
  • 1 small lemon, juiced
  • 1 tsp red chili flakes
  • sea salt and freshly ground black pepper, to taste

Small dice all of your veggies and add them into a large bowl together with the diced cantaloupe, pomegranate arils, and pumpkin seeds.

In a small bowl, whisk all the ingredients for your dressing together really well.

Drizzle the dressing over your salad and toss well to combine.
