Meal Prepped Breakfasts

Mornings can be chaotic, and trying to fit in time to cook a healthy breakfast sometimes feels impossible, especially during the hectic back-to-school season. But I still think it’s important to have a nutritious and tasty meal to start the day with.

That’s why I love planning ahead to ensure we always have something ready to eat that’s packed with vitamins, minerals, and protein.

Here are 20 of my favorite breakfasts to prepare to make my mornings smoother and start the day right.

1. Breakfast Egg + Cauliflower Protein Packed Casserole

This is one of my favorite breakfasts because it feeds many people at once and can be prepped days in advance. It’s also perfect for sneaking veggies into a meal without your family even noticing.

2. Spinach + Mushroom Egg Muffins

These muffins taste fantastic and are LOADED with veggies and nutrients. They can be made ahead for meal prep and then reheated throughout the week as needed. Having these ready will take a ton of stress off you during these busy school weeks.

3. Cherry Chocolate Overnight Oats

Cherries + Chocolate makes for such an incredibly indulgent and delicious combo! Overnight oats are a favorite of mine. As they soak overnight, the starches break down, which improves digestibility, and the natural phytic acid is greatly reduced, making them more easily absorbed by your body.

4. Eggs, Bacon, and Green Bean Breakfast 

This is a staple on our weekly menu because of how easy it makes my life during the busy school year. Not only is it a time-saver, but it also guarantees I’ll actually eat something before running out the door!

5. Peanut Butter-Chocolate Chip Oat Muffins

These muffins have a special gooey treat in the center – so if you’re a PB + Chocolate fan, you’ll want to run to the kitchen and make these immediately! Plus, they’re budget-friendly and simple to make.

6. Mini Lemon-Blueberry Pancake Skewers

Make a batch of these little pancakes, cut up the bananas the night before, and store it all in the fridge. That way, in the morning, all you have to do is assemble and enjoy! 

7. Rachel’s Homemade (copycat) Aussie Bites

These make excellent after-workout snacks and breakfasts on longer days or busier mornings. They’re completely packed with energy through complex carbohydrates and healthy fats, along with an impressive amount of fiber!

8. Piña Colada Overnight Oats

Pina Colada Overnight Oats are an invigorating, easy, and convenient morning treat! Fresh pineapple combined with coconut creates a refreshing island favorite flavor. They taste like a dessert with the nutrients and staying power of a meal!

9. Tex-Mex Style Breakfast Casserole

Save this one for the holidays or when your house is full! Pull this beauty out of the oven, top it with your favorite Tex-Mex style toppings, and then sit back and receive all the praise, happiness, and overall satisfaction headed your way!

10. Coconut Mango Chia Pudding

Chia Pudding is a great way to easily get all the benefits of those little chia seeds. It’s also an ultra-creamy indulgent (yet secretly very healthy) treat that tastes straight from an exotic island!

11. Pumpkin Jalapeno Muffins

I know this combo might seem strange, but I promise, the flavors complement each other perfectly! The muffins make an awesome addition to your morning savory breakfast alongside some scrambled eggs or a big bowl of chili!

12. Cabbage and Cheese Frittata

With this frittata, you don’t have to choose between starting your day with a full serving of vegetables and eating something incredibly flavorful and satisfying! Cabbage is underrated, in my opinion. It’s low in calories and high in nutrients and fiber.

13. Creamy Pumpkin Spice Overnight Oats

It’s pretty much pumpkin spice season, and I’m SO excited! Pumpkin is loaded with vitamins, minerals, and plant compounds that provide several health benefits. Plus, it just tastes fantastic.

14. Berry Breakfast Tart

Our Berry Breakfast Tart is absolutely GORGEOUS and fresh tasting, while also being fairly easy to make, considering the beautiful final presentation you’ll create! If you prepare the crust and filling the night before, wait until right before serving to combine them.

15. Kitchen Sink Monster Breakfast Cookies

Here’s another grab-and-go morning breakfast idea for you! The cookies taste divine and are versatile and customizable to your family’s preferences. Make a batch and keep them around for a quick breakfast or after-school snacks.

16. Cabbage Hash Browns

These cabbage hash browns are incredibly flavorful, thanks to all of the seasonings and the onion. Add them to your plate as a tasty, nutritious, and filling side dish for any meal, not only breakfast!

17. Peanut Butter Banana Muffins

Budget-friendly, delicious, quick, and easy, really, what more could you want for a breakfast? Don’t be afraid to enjoy them all day long. Thanks to the potassium and protein, they also work great as an after-school or after-workout snack.

18. Bacon & Egg Fried Rice

You can make this breakfast the night before or the morning of, even if you don’t have much time. In under 20 minutes, you’ll have a balanced flavor-packed meal. So keep this recipe handy when you need to put some food on the table quickly!

19. Potatoes O’Brien

Potatoes are a whole food and a nutrient-dense meal option, especially for active and growing people requiring higher carbs for energy! This meal is also really filling, so if you need to stretch the family budget, this is a great option.

20. Breakfast Fruit + Yogurt Bake

This fruit and yogurt bake stays well overnight in the fridge. Or you can combine the ingredients quickly, throw them in the oven, get ready for the day while it cooks, and then return to a delicious breakfast ready to enjoy!

Meal prepping breakfast is a serious game-changer for me! It really does make all the difference and sets everyone up to have a better day.
