20 Recipes For When It’s Too Hot to Cook

Does the heat ever make your appetite vanish, or your capacity to put together complicated, healthy meals drop to an all-time low?

Because I know that happens to me!

When I’m too hot or tired to cook, I often rely on slow cookers or air fryers to do all the work so I don’t have to spend too much time in the hot kitchen cooking every night.

Or, if I’m craving lighter, simpler meals that provide more hydration, I’ll turn to sandwiches, wraps, and salads.

Here are 15 meals perfect for those days when it’s just too hot to cook, PLUS 5 extra recipes for snacks, treats, and desserts.

Crock Pots & Air Fryer

3-Ingredient Crock Pot Pulled Chicken

Crock Pot 3-Ingredient Pulled Chicken by CFC

This pulled chicken is super simple with complimenting flavors… but the best part is that you can use it for many different meals. Eat it alone, or add it to a soup, salad, or recipe of your choice!

Crockpot Pineapple Chicken

Sweet and tangy homemade pineapple sauce really pulls this recipe together. It’s an incredibly easy way to feed your crew this week and leave them all feeling satisfied!

Air Fryer Chicken Fajitas

This chicken fajita recipe is packed with flavor and protein! As much as I love grilling in the summer, sometimes it’s too hot. Thankfully, the air fryer is a perfect way to make similar meals inside quickly and easily.

Quick & Tasty Air Fryer White Fish

Tasty, tender, flaky fish seasoned to perfection with a nice crispy coat! If you start now, you’ll have an amazing meal ready to eat in just about 10 minutes.

Sandwiches & Wraps

Ham + Cheese Cracker Sandwiches

Coming up with easy, quick lunch ideas is difficult, so I’m a big fan of bento boxes and meal prep lunch ideas like this one! Easy, quick, and super convenient!

Low Carb Sandwich Roll-ups

These are great in the summertime because you can just throw the ingredients in a cooler, head up to the mountains or down to the beach, and have a super low-fuss meal or snack!

Rainbow Veggie + Hummus Wraps

With these wraps, you can take the phrase “eat the rainbow” literally! It’s incredibly versatile, so you can take this recipe and get creative, altering it to fit your family’s tastebuds.

Pickle Lover’s Chicken Salad

Chicken salad is a classic ‘it’s too hot to eat’ meal, in my opinion, and this one, with the added pickles, is one of my favorites!

BLT Egg Wraps

I often crave BLTs in the Summer when our gardens are overflowing with tomatoes. Thanks to the high-quality protein, veggies, and fats, these wraps will leave you feeling satisfied for hours!

Salads

Veggie Noodle Tuna Salad

I’m a sucker for zoodles, especially in hotter months, and this salad is one of my favorite uses of spiralized zucchinis. It’s delicious, inexpensive, nutritious, and naturally hydrating!

Delightful and Satisfying Steak Cobb Salad

Tender steak adds a rich, savory flavor and texture to this salad, making it a satisfying and delicious meal. It’s great to make with leftover steak, so next time you grill, consider making extra for meals like this!

Greek-Inspired Iceberg Lettuce Salad

A spin on traditional Greek salads for a refreshing meal that transports you to the sun-kissed Mediterranean coast! You might not be an iceberg lettuce fan, but I have always truly enjoyed its refreshing, sweet crunch added to salads, sandwiches, and tacos.

Pesto Chicken Salad Lettuce Wraps

Here’s a slightly different salad for you! Homemade pesto is SO much tastier than the store-bought version and is a perfect addition to meals like this one.

Creamy Micro Chopped Salad

This recipe takes a bit longer, but it’s completely worth it! The pomegranates have a delightful flavor, and the salad is the refreshing meal I often crave after a long, hot day.

White Bean Tuna Salad

An incredibly delicious Mediterranean-inspired spin on a quick and healthy tuna salad. The flavors, colors, and textures happening in this bowl are impressive for such a simple meal!

Dessert & Snacks

Sweet + Spicy Strawberry Salsa

Looking for a snack that hits the spot? Strawberry salsa is a sweet and spicy salsa that combines the natural sweetness of strawberries with the bold, tangy flavors of traditional salsa. It’s a unique and delicious twist on classic salsa!

Prosciutto-Wrapped Summer Melon + Baby Arugula

Here’s a beautiful and simple appetizer for you! A big platter of this prosciutto-wrapped melon is perfect for big groups. Seriously, your friends and family are going to be super impressed!

Peanut Butter Froyo Pops

Without school, kids are often bursting with energy, and it’s hard to fill their days with activities. So, invite them into the kitchen with you to make their treats. These froyo pops are high in protein and healthy fat and taste *almost* exactly like ice cream Snickers bars!

Orange Creamsicle Homemade Ice Cream

Orange Creamsicle flavored ice cream treats are so fresh and bright tasting and even smell delightful! They’re a favorite of mine, especially during these brutally hot days.

Here’s another recipe that your kids can make with you! They taste divine and are great for breakfast, dessert, or as a quick snack.
